“Lukas Nagl in ‘Bootshaus’ is getting better and better – and the same applies to Philip Rachinger from ‘Ois’ and Lukas Kienbauer from ‘Lukas’ – these are three gleaming lighthouses in Upper Austria, something is really going on there,” says Christian Grünwald. The publisher and editor-in-chief of “A la Carte” today publishes the new ratings of the restaurant guide. Lukas Nagl, Gault Millau chef of the year and head chef of the “Bootshaus” restaurant in Traunkirchen, is once again at the top of the federal state. Like his colleague Philip Rachinger from the “Ois” in Neufelden, he earned five stars, and Lukas Kienbauer, third in the group, is rising steadily in the ratings and turning Schärding into a meeting place for lovers of top gastronomy.

In cut-throat competition

What the three of them have in common is their approach to the kitchen: using local ingredients creatively. For Grünwald, a concept that is a recipe for success in all of Austria’s top gastronomy: “Focusing on regional products, but not making a dogma out of it.”

130 restaurants selected by the editors are tested anonymously every year. Points and stars are awarded to the hundred best, the other restaurants are listed as recommendations. No company from Upper Austria has climbed into the top 100 ranking. The “Holzpoldl” from Lichtenberg, rated with three stars and 80 points in 2022, did not make it among the best in Austria this year. Grünwald: “The normal cut-throat competition.”

He and his team are not worried about top gastronomy in Austria. “It’s quite a vital matter.” Long waiting times for a table and restaurants that are fully booked speak a language for themselves. “Some of the menu prices are already close to 300 euros,” says Grünwald. Especially against this background, a regional path is the right one. “Reasonable luxury – with regional products that are usually more affordable.”

And one thing is always clear: “Top gastronomy is not about satisfying hunger, but about culinary entertainment.”
