“We have a high level of quality and a high standard to defend and of course we mustn’t water it down,” said WKÖ gastronomy chairman Mario Pulker on Wednesday in the Ö1 “Mittagsjournal”. An application from the green economy for vegan/vegetarian cooking was rejected by the gastronomy association. People are basically open to new ideas, but there are still unanswered questions, according to Pulker.

“There was misinformation in advance about which documents I had to enclose for this application,” said Joachim Ivany from the Green Economy, who originally submitted the application. “That was corrected at this meeting yesterday in Salzburg.” They will now work flat out to prepare the documents for the next meeting in November.

Concrete content is missing

One does not close oneself to the idea of ​​a new teaching, said Pulker. But concrete content is still missing, such as a job description, a curriculum or examination regulations. He also referred to alternatives to teaching: “What we have already done in the past is that we have already incorporated additional training in the area of ​​vegetarian food and vegan food.”

Union representative Berend Tusch from vida can also imagine meatless additional training in the apprenticeship instead of a new apprenticeship. He thinks in particular of the future prospects of the apprentices who, after a vegetarian or vegan cooking training, have a lack of meat preparation skills. “And of course, as a trade unionist, I don’t want training to take place here where I no longer have any chances on the job market,” says Tusch.
