Vigil Stay

This new venture by Alejandro Vigil seeks to bring wine culture closer to Buenos Aires, allowing visitors to enjoy a unique experience that combines the passion for wine, gastronomy and culture.
The architectural concept is a reinterpretation of the European patio house-style mansions, introduced to the country at the end of the 19th century by European immigrants who forged the beginnings of the wine industry in Argentina.
In the heart of the property are the vineyards, where visitors will be able to learn about the grape cultivation process and enjoy an environment that will transport them sensorially to the Cuyo region.
In the main building there will be a wine cellar with concrete eggs and oak barrels, where tourists can learn about the different varieties of Mendoza wines and their production, in addition to tastings.
The restaurant will have two rooms: The Gualtallary Room, a warm restaurant with a large tasting bar that can accommodate 90 diners; and on the other hand, the Valle de Uco Room, a space based on the use of regional, seasonal products and the use of fires and clay ovens, with space for 94 diners.
For those looking for a more exclusive experience, the Chef’s Table will offer an intimate space for 8 guests, where Chef Diego Irato will present his most distinguished dishes.
Outside, the Patio de los Hornos, the Gallery and the Garden offer different space options for large events, cocktails or receptions, with capacities ranging from 90 to 640 people in cocktail format.
Gastronomy
Estancia Vigil’s cuisine will focus on local products, respecting the timing and quality of the ingredients. The dishes, prepared with the utmost dedication, will stand out for their authenticity and flavor, paired with high-quality wines selected by Alejandro Vigil, known for their excellence and distinctive character.

He began his career in 1999 with the opening of the Meliá Buenos Aires Hotel and has played key roles in establishments such as the Sofitel Buenos Aires, the Pullman Hotel in Rosario, and as executive chef at the Sofitel Cardales for more than a decade. Their talent and creativity will enrich the culinary proposal of this new project. Working together with Iván Azar, chef of Casa Vigil, he will maintain the characteristic approach of the Mendoza proposal, adapting it to local products to create dishes that pair perfectly with the wines selected by Alejandro Vigil.
