The white asparagus in particular is considered a real luxury vegetables for many gourmets. Lovers still have to be patient this year.

German asparagus will probably be common this year in mid -March. Winter was as cold as in 2017, the soils were well frozen, said Simon Schumacher, managing director of the Association of Southern German asparagus and strawberry farmers (VSSE). In addition, the weather was overgrown with little sun.

However, the sun is necessary to heat up the film tunnel over the asparagus and thus stimulate the growth of asparagus plants. “That’s why I think it won’t be a super early start,” said Schumacher. At the earliest in the middle, at the end of March, in the best locations in Baden, in the Palatinate and South Hesse, asparagus can be expected.

Bavaria comes “a tick to Baden-Württemberg”

Bavaria would then come “a tick to Baden-Württemberg”. Around a week or two after the start of the season in the south, asparagus is usually also stabbed in North Rhine-Westphalia and Lower Saxony. According to his own statements, Brandenburg’s farmers expect an early harvest for the region at the end of March in the face of mild temperatures. The aim is therefore to keep prices stable. A kilo of local asparagus in good quality will again cost around 10 to 12 euros.

The asparagus farmers in Rhineland-Palatinate also expect a harvesting start at the end of March, and producers in Hesse still want to grow the plants for two to three weeks.

Around 1,300 asparagus companies in Germany

According to VSE, there are around 1,300 asparagus companies in Germany. In 2024, around 105,000 tons of asparagus were harvested nationwide after preliminary figures. Accordingly, around 10 to 15 percent of this are green asparagus, the vast majority is white asparagus.
