In the corner of Gorriti and Lavalleja, in the Gastronomic Pole of Palermo, two facades loaded with urban art awaken the curiosity of those who pass. There they get up Disassembly bar and SESSION DISASSEMBLYtwo proposals that managed to create a true ecosystem around artisanal beer, combining homemade food, author cocktails and an environment where art, music and good energy are protagonists.

A space where urban art marks identity

The murals that dress each place are not a minor detail: in disarmadero, Alfredo Segatori gave life to the “old man of disarmadero”, while in Session, Martín Ron immortalized the “old woman of the disharmadero.” These interventions have become part of the identity of the project and a visual magnet that invites you to enter. Once inside, the spirit of the place is revealed in large windows, recycled wooden tables, black sidewalks and bars full of canillas that mark the beer pulse of the city.

The project was born under the vision of Carolina Ochoaentrepreneurs passionate about gastronomy. In 2019 Nicolás joined Harry Savarrey, driver and radio producer, also recognized by his beer passion, with the opening of Disassembly Session. Since then, the project grew to became a true emblem of the neighborhood.

Artisanal beer, the heart of the place

With more than 40 canillas in permanent rotation between both stores, LA beer selection is one of the biggest disarmament. Homemade food to share

The kitchen completes the experience with a proposal designed to tapas and to share abundant dishes. Among the most requested specialties include chard fritters with Alioli, the Spanish tortilla, the fried raviols of lamb, the homemade empanadas of Osobuco and the Tequeños with avocado sauce “Guasacaca”, in addition to the tables of cheeses and cold cuts. The famous broken potatoes, made with triple cooking, are a seal of the place and an infallible accompaniment for beer. For those who seek more forceful options, the Sum Hamburgers letter and homemade hamburgers such as those of Bandiola Braza, Milanese or vegetables with cheeses, all prepared with the same artisanal spirit.

For its part, SESSION DISASSEMBLYwhich opens from noon, combines the spirit of the bar with high quality gourmet products. There you can try the gourmet choripán, the buffer eye sandwich with avocado, sardo cheese and purple onion, or that of brie cheese with asparagus, dry tomatoes and arugula, designed to accompany artisanal beer with an extra level of detail.

Beyond beer

The cocktail bar is another attraction, under the curatorship of Bartender Diego Zelaya. There, author cocktails such as the Gin Tonic Disarmadero (Gin, Red Fruits, Pomelo and Tonic) or the Great Summer Tinto (Red Wine, Vermouth Rosso, Cinnamon, Limon and Soda), together with reinvented classics such as Penicillin, the Gin Tonics or Spritz. The proposal is extended with a careful selection of wineries from Bourgeas Boutique as Uco House, Casa Ambrosia, Familia Adrover and Finca Los Dragones, among others.

Together, Disassembly Bar and Disassembly session managed to build much more than two bars: they are a meeting point with their own identity, where artisanal beer is celebrated, homemade cuisine is enjoyed and urban art frames an experience that is lived both in the bar and in the sidewalk or on the terrace.
