Ingredients:
- 250 gr of couverture chocolate
- 10 gr of cocoa butter (purchased at naturist or pastry places)
- 1 g of pink food coloring or the color of your choice
- 1 g of gold dust
- Alcohol w/n
- mold N15
- 50 grams of sweet milk
Preparation:
Use a mold for 250 grams of Chocolate, clean it with alcohol then splash it with edible gold paint. Wait for it to dry.
To make the paint, melt cocoa butter and add the fat-soluble dye. Apply the paint on the mold. Wait for it to crystallize and then fill the mold with chocolate.
To temper the chocolate, cut it into equal parts, place it in a container and melt it in a bain-marie or in the microwave until it reaches 43°. Pour the melted chocolate onto a marble countertop and spread with a spatula. Move the chocolate to lower the temperature to 27°. With the spatula place it in the container.
Then pour into the mold, let it rest upside down to remove the excess and repeat this step two or three more times according to the desired thickness of the egg layer.
Let it rest for 10 minutes in the refrigerator, leave it for another 5 minutes at room temperature, carefully unmold it, fill it with 50 grams of dulce de leche and let it rest. Before gluing it, level the edges to make it easier to adhere to a slightly warm plate.
