The official added that the idea is to add establishments from both towns of the Quebrada de Humahuaca to others that have already obtained their distinction in Tilcara and San Salvador de Jujuy. Regarding the process, she finally commented that after the awareness meeting, during the months of May and June, training, face-to-face technical assistance and personalized monitoring and evaluation will be carried out.
For the distinction, the entire gastronomic process that takes place is taken into account, from the collection or harvesting of the raw material, the elaboration of the product that becomes a typical dish of the region and its presentation on the table.
The program also contemplates the quality criteria that a gastronomic establishment must achieve and can apply in its daily work, directing its efforts towards staff training and meeting the needs of diners.
The gastronomic establishments that achieve the proposed objectives will obtain the “CocinAr-Cocina Argentina Seal”, which is valid for 2 years, and will be promoted in the official communication of the Ministry of Tourism and Sports of the Nation in actions at a national and international level.
What is committed to is to promote the integration of the identity gastronomy of each place in the tourist activity, with the objective of consolidating the gastronomic tourism offer of the destinations.
