For this great launch, the firm will convene some 1,500 people on Tuesday, May 3, in front of the Basilica of Luján, who will witness the elaboration of a monumental milanesa of between 800 and 1,000 kilograms (kg).
The numbers of the ingredients are as surprising as the dish to be prepared: 580 kg of buttock meat, 420 kg of breadcrumbs, 50 kg of mozzarella, 50 kg of ham and 100 liters of tomato sauce. That industrial-scale quantity will be deposited in 2,000 liters of oil that will boil at a temperature of 140 degrees to fry this unique dish between 15 and 20 minutes. The result? An exquisite Neapolitan Milanese that will be tasted by all those present.
The question is: what container can hold such a culinary “monster”? The mega pan that will contain it was specially designed for the occasion and will have the unprecedented measurements of 4.5 meters long by 3.2 meters wide and about 50 centimeters high. The event will take place at noon and will be led by Mariano Peluffo and will have the presence of the charismatic chef Luciano Lopez Fuente, in charge of directing the cooking of the product, together with the team of 20 Holis chefs. Subsequently, a notary will be in charge of certifying the dimensions and weight of the product and will have as a finishing touch the delivery of a plaque, by Leonardo Boto (mayor of the city of Luján) to the authorities of Holis on the occasion of having elaborated “the largest Milanese in the world”.
According to a study by the Institute for the Promotion of Beef (IPCVA), milanesas, steaks, roasts and stews, in that order of importance, are the meals with beef that are eaten the most in the Argentine household. In the country, the per capita consumption of milanese beef amounts to 11.4 kilograms per year.
Alimentos Holis, which has a plant with 110 employees, produces 1% of the national consumption of meat milanesas with 310 tons per month (210 for white brands and 100 for the HOLIS brand exclusively), within a market that produces 400 million kilos of milanesas per year.
