falafel by Marina Becher (@marinabechercocina)
Flavor explosion! It is a typical Middle Eastern recipe. We could describe it as a kind of chickpea meatball, which is usually taken into account in vegetarian menus.
Surely you will see many recipes going around but this is: the richest! It’s a little fattening, but it’s worth it.

Ingredients:
- Chickpeas, 1k
- Fresh chopped parsley, 3 teaspoons
- Fresh chopped cilantro, 2 teaspoons
- Garlic, 4 cloves
- Baking soda, 1 teaspoon
- Cumin, 2 teaspoons
- Cinnamon, 1/2 teaspoon
- Nutmeg, 1/2 teaspoon
Process:
- Let the chickpeas soak for 24 hours
- Process all the ingredients (the mixture has to be like a coarse sandblasting).
- Let rest 1 hour. Make little balls and fry them.
- Preparation time: 50 minutes (+ 24 hours of soaking the chickpeas).
- Cooking time: 30 minutes
- Number of servings: 4
Tip: It goes very well with a Greek-type yogurt sauce, very fresh, with lemon and mint.
