This variety is also widely used for the production of sparkling wine in the Champagne region and in other wine regions and our country could not be oblivious to it, adopting it for the production of sparkling wines, often accompanied by Chardonnay grapes.
When it comes to pairing, Pinot Noir admits a large number of dishes, it can be balanced with almost all meats such as lamb, pork, fish, chicken and duck, but it is not convenient to pair it with dishes that contain strong or spicy ingredients. Salmon is one of the most chosen fish to combine with Pinot, while softer fish go more with white varieties. A snack of cheeses such as Brie and Camembert with Pinot Noir is also highly recommended.
It is considered one of the most difficult grapes to grow and vinify. Its thin skin and low levels of phenolic compounds make it produce wines with a light color, medium body and few tannins. When young, Pinot Noir wines tend to have aromas and flavors reminiscent of red fruits, such as cherries, raspberries, strawberries, and also more earthy, such as those of pine mushrooms.
Returning to the country the vines adapted very well to the cold climate terroirs such as those found in the highlands of the Uco Valley, in Mendoza and in Patagonia, where it stands out mainly, although 70% is planted in Mendoza and only 12 % in Patagonia. The rest goes from the province of Buenos Aires, passing through Entre Ríos, Córdoba, the NOA and Chubut.

From San Patricio de Chañar in the Province of Neuquén, this classic specimen expresses all the qualities of the Patagonian grape. A part of this wine remained in oak barrels for 12 months, giving it greater structure and more complex notes, without sacrificing freshness. On the palate aromas of mushrooms and mineral notes appear, accompanied by aromas of vanilla and cocoa provided by the oak. A very round, fruity wine with sweet tannins, medium body and moderate acidity.

Made with grapes from vineyards located in Valle de Uco, Mendoza, this Pinot Noir, created by oenologist Pablo Cúneo, is a red wine with a bright ruby red color. Its aromas are reminiscent of red and black fruit, as well as different spicy notes that make it a fresh and complex wine. This plain stands out for being one of the coldest areas of the Valley, in a south-east disposition of the Paraje Altamira. Bright light red. Aromas of red fruits, wet leather, smoky and spicy flavors appear. Balanced acidity and low tannins and round in the mouth. Silky, elegant, refined and subtle finish.

This wine is born from the best selection of our farm 22, block 1. It differs as a block wine due to its special characteristics that distinguish this terroir, with its floral, herbal and spicy notes, and the typical red fruit of the Pinot Noir of cold zone. It was harvested in March and fermented in concrete, using the 50% whole bunch technique. Once devatted and malolactic fermentation finished, it was aged in untoasted French oak foudres for 18 to 20 months.
