“The place was clearly the inspiration for this menu: it immediately moved me to Patagonia, so it was inevitable not to derive appetizers, dishes, desserts and products from that region,” Cafiso details. The truth is that trout, mushrooms, cheeses and smoked foods travel from there, while organic variants arrive together with local producers. “The fresh fish comes in the day, three times a week, except for the octopus that comes from Chile. In both baking and pastry, we choose to use organic flour and sugar, avoiding preservatives that are not natural”, adds Emiliano.

The Patagonian lamb Gigot, the rack -which are the ribs- and the ravioli; the fish -which comes out skinned and whole, for two people, and is carved at the table-; the mushroom risotto -smoked pine and morel-; and a Crème de americana and vanilla.

The space is discovered immersed in nature, with more than three thousand specimens of trees that are over a quarter of a century old: European Oaks (100 years old), Eucapyptus Saligna (50 years old), Leylandi and Calvos Cypresses (40 years old), Blue Cedar ( 40 years), Alamos Plateados (30 years), Pinos Araucaria (30 years), Acer Amarillos (30 years) and Ceibos (25 years).

A building that alternates stone and wood opens its doors to a glazed floor, which invites you to sit in the living room while also revealing the possibility of visiting the terrace. The living rooms near the bar are presented as a more relaxed option but just as tempting, with southern airs hanging around every corner.
