Ingredients:
Flour 0000, 1 kilo
Fresh yeast, 20g
Oil, 8 tablespoons
Warm water, 4 tablespoons approx
Sugar, 1 tablespoon
Salt, 1 tablespoon
Tomato pizza sauce, 1/ cup
Grated mozzarella cheese, 1 cup
Process:
In a bowl, put the yeast with lukewarm water, sugar and sprinkle with flour. Let foam covered with a plastic wrap.
In a large container put the rest of the flour and make a hole in the middle.
In the center put the oil and the foamed yeast.
Add the sponge to the preparation.
On the sides put the salt. (Be careful! If the salt comes into contact with the yeast, it will not be able to continue growing). Mix everything incorporating warm water to form a dough.
Knead until smooth and leave covered in a warm environment until doubled in volume.
Then stretch, paint with the sauce and sprinkle with the cheese.
Roll up the dough (note: it has to look like a matambre).
Cut into slices and bake until golden.
It can be frozen!

Number of Servings: 6
Tip: These mini rolled pizzas can be added: ham, olives, chopped tomato. If adults are going to eat it: pesto, oregano, dried tomatoes, raw ham or whatever comes to mind and you like.
