- Mix the cornstarch, sugar and salt in a bowl, then add the cold butter and mix everything together to form a slightly white cream.
- Add the egg and vanilla, and mix until a homogeneous dough is formed.
- Cover the dough with a towel and let it rest for half an hour in the refrigerator.
- Preheat the oven to 180°C.
- Stretch the dough to a thickness of approximately 3 millimeters and cut it with a round mold.
- Place the lids on a greased and floured baking sheet.
- Bake them for 15 minutes, or until golden.
- Let the lids cool to prevent them from breaking.
- To assemble the alfajores, join two lids with dulce de leche and add grated coconut around the edges.
