To try authentic Italian pastas, L’adesso is ideal. Here, for more than 10 years, the talented chef Leonardo Fumarola has recreated traditional dishes from his native Italy, applying “now” techniques and presentations. Originally from Puglia and recognized by gastronomic critics, he selects the best local and imported ingredients to achieve maximum quality. This is evident in dishes such as the iconic Cacio e Pepewhich has a long and thick artisanal pasta, “butter” in view of diners inside a large mold of pecorino cheese.
On the podium of the most requested are the ossobuco and spinach ravioli, with fresh cream, mushrooms, pangrattato, rosemary and lemon; and the bucatini al bronzo a la amatriciana, with Italian pomodoro, guanciale, red onion, fried basil and pecorino. If you prefer a more classic option, the Bolognese lasagna is a must-try, which combines pomodoro, bechamel and parmesan.

Mare By Fran
The best fusion between homemade pastas and seafood is found at Mare, the brand new opening in Puerto Madero, by the prestigious Mar del Plata chef Fran Rosat and the La Parolaccia group. Both combined knowledge and experiences to achieve a proposal of excellence.
Their pastas are made with free-range eggs and 000 flour, with outstanding options such as fusilli al fierrito with chistorra, mussels and saffron; and the pink salmon and ricotta malfatti with leek cream and smoked salmon. They also have De Cecco Italian pastas with seafood.

In Benedetta, the young chef Agustín Brañas shines with rotisserie dishes with a gourmet twist, made with top-of-the-line raw materials and 100% traceability. One of the menu items most acclaimed by diners is the pasta, which here is prepared with 0000 flour with a high amount of protein, rimacinata durum wheat semolina and a good amount of yolks – coming from eggs from hens fed with natural sources. organic-, which makes them have more body, resistance to bite and that they do not overcook easily.
Both at noon and at night you can try some eggplant sorrentinos, with smoked eggplant, cherry tomato sauce, capers and dried tomatoes; or some agnolottis del plin mushrooms, with dried mushrooms, ricotta, sardo and leek cream. They also have gratin semolina gnocchi and the classic lasagna.

To enjoy artisanal pastas overlooking the river, in an extremely attractive atmosphere, the place is Enero. Located on the Costanera of Buenos Aires, this space has an Italian-Argentine menu with a section dedicated to pasta, where they offer four varieties of their own preparation.
The pumpkin ravioli with cabutia, parmesan and basil stands out, bathed in a butter sauce with fresh sage and toasted hazelnuts; the casarecce di zucchine and prawns, and the provoleta gnocchi with Italian pomodoro, garlic chips and fresh basil leaves.
