- 20g. fresh yeast
- 300g. water
- 500g. flour 000
- 3 tbsp. olive oil
- 2 cditas. salt

- The first step is to pour the flour onto the counter and form a crown, in the center place the yeast in small pieces and the oil. Add the salt on the sides of the flour to avoid contact with the yeast.
- Pour a little warm water into the center of the crown and, using your fingers as a whisk, dissolve the yeast. Then add the remaining water as you incorporate the flour from the edges.
- Knead until you achieve a smooth, tender and elastic dough. Once this dough is obtained, cover it with a cloth and let it rise in a warm place until it reaches double its size.
- Cut small portions of the leavened bun and form buns the size of a ping-pong ball. Flatten the dough balls with the palm of your hand or with the rolling pin to obtain a flat dough with an approximate thickness of 5 mm.
- Sprinkle the buns with flour and cover with film or a damp cloth. Let rest for 30 minutes.
- Preheat the oven to 240º and place the empty plate where the rolls will go for a few minutes to preheat it.
- Once the plate is hot, place the buns on it, leaving a space because they will expand a little. Place in a very hot oven for 6 to 10 minutes. Barely remove golden brown so as not to overcook.
