Ingredients
For the mass
- 2 cups of flour for all use
- 1/2 cup of cold buttercut into small cubes
- 1/2 cup of cold water
- 1 teaspoon of salt
For the filling
- 2 cups of fresh mozzarellacut into small cubes
- 1 cup of Cherry tomatoescut in half
- 1 cup of Basil leaves fresh, chopped
- Salt and pepper to taste
- Olive oil extra virgin

It can be made in a gas or wood oven.
Elaboration
For the mass
Gradually add the cold water and knead until it forms a soft dough.. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
For the filling
In a boat, mix the mozzarella, cherry tomatoes and basil. Add salt and pepper to taste and a splash of olive oil. Mix well.

Assembling the empanadas

Divide the dough into walnut-sized portions. and roll out each portion into a thin circle.

Place a portion of the filling in the center of each circle.

Fold the dough in half, covering the filling, and press the edges with a fork to seal.

Place the empanadas on a baking sheet and send them to the oven for approximately 20-25 minutesor until golden brown.

Remove from the oven and let cool for a few minutes before serving.
