Ingredients:
- 1 bunch of green asparagus
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cups cherry tomatoes
- Olive oil
- 2 cloves of garlic
- 1 spoon of sugar
- 1 bunch of cilantro
- Crumbled toast to decorate
Preparation:
In a bowl, marinate the tomatoes with garlic, oil, salt and pepper, close and refrigerate for half an hour.
In a frying pan, sauté the previously washed asparagus – they should be crispy.
In a small baking dish, place the marinated tomatoes and sprinkle them with sugar. Bake it in a very strong oven for approximately 15 minutes. or until lightly browned.
Let the tomatoes cool and add coarsely chopped cilantro.
On a serving tray, place the asparagus and the confit tomatoes on top. Sprinkle with toasted breadcrumbs. Serve warm or cold.
