Ingredients

For the mass

  • 2 cups of flour
  • 1 cup of sugar
  • 1/2 cup of unsalted butterat room temperature.
  • 3 eggs
  • 1 teaspoon of baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon of vanilla extract

Ricotta filling

  • 500 grams of ricotta
  • 1 cup of sugar
  • 3 eggs
  • 1 teaspoon of vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons of flour

Elaboration

For the mass

  • In a big boat, beat the butter and sugar until you get one smooth and creamy mixture.

  • Add the eggs one by one, beating well after each addition. Add the vanilla extract and mix.

  • In another boat, sift the flour, baking powder and salt. Gradually add the flour mix with the butter and mix until well combined.

  • Transfer the dough to the cake pan and spread it evenly on the bottom.

  • For the ricotta filling

    • In a bowl, mix the ricotta with the sugarthe eggshe vanilla extractthe lemon zest and the flour. Mix until smooth.

    • Pour the ricotta mixture over the dough in the mold.

    • Bake in the preheated oven for approximately 50-60 minutesor until the top is golden brown and a toothpick inserted into the center comes out clean.

    • Let the cake cool in the pan for about 15 minutes. before transferring it to a rack to cool completely.
