Recipe: how to make alfajor with Havanna sea salt at home
Ingredients
- 50 grams of butter
- 50 grams of sugar
- 50 grams of honey
- 1 egg
- 250 grams of flour
- 50 grams of cornstarch
- 1 teaspoon baking powder
- 2 tablespoons of bitter cocoa
- 1 tablespoon orange liqueur
- 1 Teaspoon vanilla extract
- Chocolate to melt (necessary amount)
- Sea salt
- 120 grams of dulce de leche
- 120 grams of white chocolate
- 100 grams of cream
Step by step preparation
- Mix the butter with the sugar, egg and honey in a bowl.
- Add the vanilla essence, orange liqueur and bitter cocoa powder and incorporate everything. Continue with the mixture.
- Add the previously sifted flour and cornstarch and mix until you have a soft but firm dough. This step is important to give consistency to the alfajor.
- Stretch the dough so that it is a couple of millimeters high and cut round caps with the size we want to give to the alfajor.
- The most important step: Add very little sea salt on top (do not overdo it) and bake in the oven at 170 degrees for 8 minutes.
- Prepare a ganache with the dulce de leche, the previously melted white chocolate and the cream.
- Take two small caps that we prepared in the oven and make an outer circle with dulce de leche pastry and, in the center, place the dulce de leche ganache.
- Melt chocolate (the higher the percentage of cocoa, the better) and coat the alfajores.
