- Boil the potatoes with their skin on in a large pot of salted water. until they are tender (about 20-25 minutes).
- Drain them and let them cool enough to be able to manipulate them.
- Peel them and step on them until obtaining a fine puree without lumps.
- Place the puree in a large bowl and add the flour little by little, mixing with your hands, until you obtain a soft and malleable dough. Add the egg.
- Divide the dough into small portions and form long rolls approximately 2 cm in diameter.
- Cut the rolls into pieces approximately 2 cm long. If you prefer them to have the typical marks, it’s time to make them with a fork.
- To cook the gnocchi, boil salted water in a large pot. Once the water is ready, add the gnocchi.
