How to make chocolate mousse
Ingredients
- 50cc water
- 140g sugar
- 200g semi-sweet or bitter chocolate
- 3 egg whites
- 200g double cream
- 100g butter
Preparation
- Melt chocolate and butter in a bain-marie
- To integrate and remove from heat.
- Heat the cream without allowing it to boil and join the chocolate.
- Make a syrup with sugar and water
- Beat the egg whites and add the syrup thread shape without stopping beating, until it reaches room temperature.
- Incorporate both mixtures with a spatula into envolvent movements.
