Chicken in sauce with white wine:

How to prepare the recipe

  1. Season the chicken breasts to taste, it can be cut into pieces or elongated strips.
  2. Cut the onion into thin julienne strips.
  3. Wash, drain and cut the mushrooms in half.
  4. Heat a frying pan and fry half of the chopped onion for about five minutes. Then fry the chicken breast with the onion until it is sealed for about five minutes on each side. To add flavor, add the white wine, the vegetable broth and lower the heat from moderate to low.
  5. Heat the butter in a separate saucepan and fry the other half of the onions there, stirring constantly. Incorporate the flour and sauté until it begins to have a little color, then add the milk and cook until you obtain a more or less thick sauce, add salt and pepper to taste.
  6. Add the flour, onion and milk sauce to the chicken casserole, also add the mushrooms and raisins.
  7. Season the chicken in sauce with white wine with nutmeg, black pepper and salt. Keep cooking until the chicken, mushrooms and raisins are cooked.

What ingredients are needed

Self-rising flour 185 gr, sugar 175 gr, unsweetened cocoa powder 25 gr, sodium bicarbonate 8 gr, salt 2 gr, soluble coffee 5 gr, sunflower oil 60 ml, vanilla essence 5 ml, red wine 240 ml, cream for cooking for the 80 ml coverage, red wine for the 20 ml coverage and dark chocolate for the 110 gr coverage.

How to prepare the recipe

  1. Preheat the oven to 180ºC and prepare a mold of about 22 cm in diameter, better if it has a removable bottom to facilitate unmolding.
  2. Grease with oil or butter and sprinkle with cocoa powder, shaking off the excess.
  3. Sift the flour with the cocoa powder, the baking soda, the coffee and the salt into a medium bowl. Add the sunflower oil, the red wine and the vanilla essence.
  4. Mix with gentle movements until you have a homogeneous dough. Pour into the mold, tapping to even the surface and break any larger bubbles that appear. Bake for about 25-30 minutes, watching towards the end of cooking so that it does not overdo too much.
  5. Wait a few minutes out of the oven before unmolding and allow to cool completely.
  6. For the ganache, heat the cream with the wine, mixing gently. Just before it starts to boil, add the chocolate in pieces, remove from the heat and mix very well until you have a homogeneous cream.
  7. Let cool for at least 20 minutes.
  8. Cover, spreading the cream well, letting it fall off the edges naturally.
  9. Wait for it to dry a bit before serving or reserving in the fridge. To give it a festive look you can add some red and green sprinkles.
