  • 2 cloves of garlic, minced.
  • 1 liter of vegetable broth.
  • 200 ml of heavy cream (optional for a creamier soup).

Preparation of pumpkin soup

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.

  4. Add the cubed pumpkin to the pot and stir well to coat it with the sauce.
  5. Pour in the vegetable broth to cover the pumpkin and bring to a boil.
