The recipe for pepas cookies It is one of the oldest in Argentina. They are classic snacks for afternoon tea and breakfast due to their fair distribution of quince and dough. They can be found in their commercial version in supermarkets, or in bakeries with a more traditional preparation.

To make them homemade not too many ingredients are neededand the key is to knead well and let it rest for the necessary time. In addition, they can be filled with many things such as quince, sweet potato, caramel sauce and even pastry cream.

Recipe for pepa cookies
This recipe takes a total of one hour and yields approximately 20 seeds.
Ingredients
- 200 g of flour
- 100 g of butter
- 75 g of sugar
- Zest of 1 lemon (or orange)
- 1 egg
- ½ teaspoon baking powder
- Quince jam
- Boiling water 2 tablespoons
Step by step
- In a bowl, mix the flour, sugar and baking powder. Add the cold butter in pieces and crumble with your fingers until you obtain a sandy texture.
- Add the egg and knead until you obtain a homogeneous dough.
- Wrap the dough in cling film and refrigerate for 30 minutes. In the meantime, preheat the oven to 180°C.
- Take small portions and make dough balls. Place on a greased and floured baking sheet (or with parchment paper) and lightly flatten each ball, making a small hole in the center with a spoon or your thumb.
- Mix the quince paste with the two tablespoons of boiling water and stir until a paste forms. Fill the holes in the seeds with the quince. Sprinkle with sugar on top (optional)
- Bake for 15-20 minutes. Allow to cool on a rack and enjoy with your favourite infusion.
