To commemorate this October 16, World Bread Daythe Boûlan bakery invites everyone to make their own bread, using quality techniques and ingredients to enjoy 100% authentic and artisanal food.
Here we share two recipes from Chef Boulanger Diego Muscat (@Boulanargentina), perfect for kneading with the family and paying tribute to one of the most widespread foods on the world’s tables.
Complete recipe for Sourdough Bread
Ingredients:
- 1 kg of flour
- 300 grams of liquid sourdough
- 4 grams of salt
- 650 grams of water
Instructions:
1. Preparation of the Dough
– Mix the water with the liquid sourdough in a large bowl.
2. Add Flour
– Add the flour to the mixture and mix until the ingredients begin to integrate.
3.Add the Salt
– Add the salt and continue kneading on the counter until the gluten network is formed and the dough is soft and elastic.
4. Initial Fermentation
– Place the dough in a covered bowl and let it rest until it doubles in volume.
5. Bread Forming
– Cut the dough into 500 gram pieces and shape them into a bun.
6. Fermentation in Mold
– Place the buns in a banettone or mold, cover with film and let them ferment in the refrigerator for 18 hours at 5°C.
7. Baking
– Preheat the oven to 250°C. Unmold the bread onto a preheated plate, sprinkle it with water and bake for 40 minutes.
Complete recipe for Organic Sliced Bread

Ingredients:
- 1 kg organic whole wheat flour
- 600 grams of water
- 30 grams of yeast
- 5 grams of sea salt
- 100 grams of organic olive oil
Instructions:
1. Preparation of the Dough
– Knead all the ingredients in a large bowl until the dough forms a uniform league.
2. Rest of the Dough
– Let the dough rest in a bowl for 90 minutes.
3. Bread Forming
– Cut the dough into 500 gram buns. Stretch each bun on the counter and shape it into a sweet potato shape.
4. Fermentation in Mold:
– Oil a bread mold and place the sweet potatoes inside. Let it ferment until the dough reaches the edge of the mold.
5. Baking
– Preheat the oven to 240°C. Bake for 45 minutes or until the center of the bread reaches 90°C.
6. Cooling and Demolding
– Remove the molds from the oven, let them cool and unmold the bread before serving.
