Because when in the early summer of last year, Sabine Eisner was leaving the Maximilianstube in Altmünster as a tenant after six years, the then 30-year-old jumped in. This was surprising because he had made a name for himself far beyond the region with his restaurant “‘S Paul” in Traunkirchen and would not have been dependent on a second mainstay.

“I would have found it a shame if there had been no hood bar in Altmünster, and that’s why I decided to take this step,” he said to the OÖN at the time. Now it is clear: this step should have been too big. Already on April 30 of this year the MaximilianStube – it was called “Stube by Paul again” – had to give up. The overall economic situation and the lack of personnel would have made the closure inevitable that he wanted to concentrate on his restaurant in Traunkirchen again. However, the search for a successor in Altmünster was not successful.
