10 wines for spring

Have you already noticed the changes in the garden or on a walk? Fresh green slowly flashes out, buds swell and excited birds are looking for their partner and the right nesting place.

If you travel to the Wachau, with a bit of luck you will discover the first blossoming almond trees. Not to be confused with the apricot blossom. Assuming warm weather, it will start in about 14 days. About two to four weeks later, the wine sprout. Now he is still in hibernation.

The vintners were different, who were busy and cut almost all the vines. Now the first repair work follows: tightening wires, replacing wooden posts, straightening walls – so that everything is prepared for a good season.

The Viennese top chef Heinz Hanner opened the somewhat different Buschenschank “Le Büsch” in Linz a year ago and was immediately recognized as a newcomer in the “A la Carte” guide. The Roter Veltliner from Stefan Bauer goes well with the warm marinated trout with herb sauce.

Trout with herb sauce, marinated warm and with a tender salad

Ingredients (for four people):
8 brown trout fillets, 4 tbsp olive oil, 2 tbsp walnut oil, 1 tbsp tarragon vinegar, two sprigs each of fresh tarragon, basil, parsley, chives and chervil, roasted pine nuts, salt, pepper

For the salad: 2 tbsp olive oil, 1 tsp mustard, 3 dashes of balsamic vinegar, 100 g small lettuce leaves, salt, pepper

Preparation:
For the herb sugo, mix oils with vinegar, herbs and pine nuts, season with salt and pepper.
Bone the trout fillets and place on a plate.
Pour over the herb sauce and cover with cling film.
Let stand in the oven at 70 degrees for about 25 minutes.

For the salad, mix up a marinade of olive oil, mustard, balsamic vinegar, salt and pepper. Marinate the tender lettuce leaves with it.
Arrange two fish fillets in the middle of each plate, pour over the herb sauce and top with the salad.

TIP: Heinz Hanner recommends a real brown trout or wild-caught char from the Salzkammergut.
