The Weinviertel has many stories to tell, one of which concerns its size. With 14,000 hectares of vineyards and 1,459 companies, it is the largest area in Austria and accordingly offers a large variety of wines.
The Weinviertel is known for its Grüner Veltliner. The Austrians’ favorite variety has its roots on almost 7,000 hectares, which means something like: 50 percent of the domestic stock comes from the Weinviertel. And because the Grüner Veltliner with the pepper is so characteristic of the Weinviertel, the grape variety stands for the birth of DAC, which began in the Weinviertel. The controlled designation of origin is celebrating its 20th anniversary this year.

Manfred Buchinger from the Gasthaus zur Alten Schule in Riedenthal is still behind the stove at the age of 70 and is regarded as Austria’s longest-serving award-winning chef. He has had at least one bonnet for 36 years. Pinot Blanc goes well with chanterelle soup.
Hot stuffed chanterelle soup
Ingredients for 4 persons:
200 g chanterelles, oil, 1/2 l vegetable soup, 3 eggs, salt, ground cumin, white pepper, chives for garnish
Preparation: Clean the chanterelles, then briefly sauté in oil and season with salt, cumin and pepper.
Mix the cold soup with the eggs and pour into soup bowls.
Distribute the chanterelles in the bowls.
Fill a deep baking tray half full with water, put the soup bowls in and let the soup set at 90 degrees.
A little anecdote: The soup was served to 1500 guests by Manfred Buchinger as Executive Chef in the InterContinental. It stayed hot forever and the service staff couldn’t spill it.
