Mozzarella – mostly in combination with tomatoes and basil – has also become a summer classic in Austria. Now the consumer advocates of the Upper Austrian Chamber of Labor (AK) also gave the cheese classic from Italy good marks. All 17 samples in the test, including seven organic products, were flawless at the end of the best-before date, although mozzarella has a relatively short shelf life and tends to spoil quickly.
In recent years, random checks by the AK have repeatedly exceeded microbiological guideline or warning values. This year, all 17 samples of cow’s milk mozzarella from the supermarket shelves passed the microbiological, sensory and chemical-physical tests in the laboratory.
Stay away from bloated packaging
The price of the balls was between 55 cents and 1.24 euros per 100 grams. The tasters noticed a slightly sour smell and taste in only one product, but this did not lead to a devaluation. The AK advises, especially on hot summer days, to transport the mozzarella home quickly or chilled, to store it directly in the refrigerator and to enjoy it before the expiry date if possible.
Mozzarella in swollen packaging should not be bought or eaten, as this is a sign of storage and spoilage. Because of its short shelf life, the cheese specialty is offered in brine. Therefore, once opened, it should not be stored at all, or only for a short time, in a cool place covered in brine.
