Indian tomato soup
ingredients:
- 1 onion
- 1 clove of garlic
- 1 ginger slice
- 2 tsp curry powder
- 2 tbsp tomato paste
- 200ml of water
- 500 g peeled organic tomatoes in pieces
- 50 ml cream
- 1 tbsp black cumin seeds
preparation:
Sweat the finely chopped onion, garlic and ginger in olive oil, add the curry and tomato paste, fry briefly and deglaze with half the water. Reduce something. Add the diced tomatoes and pour in the remaining water. Season with salt and pepper and simmer on low for 15 minutes. Then puree with the hand blender and stir in the cream. Bring to the boil again, let stand a little longer, serve sprinkled with caraway seeds.
White chocolate almond mousse
ingredients:
- 150g white chocolate
- 2 eggs
- 1 tbsp cane sugar
- 1 organic lime
- 1 pinch of vanilla pulp
- 2 drops of lavender essential oil
- 30 g blanched almonds, chopped
- 250 ml cream
- optional fruit for decoration
preparation:
Melt the chocolate in a water bath and allow to cool slightly. Mix the eggs and sugar over steam until fluffy, flavor with a little juice and zest of the lime, vanilla pulp and lavender oil. Stir in melted chocolate and almonds. Whip the whipped cream until stiff and fold into the mixture. Pour the mousse into bowls, chill for two to three hours and decorate as you like (e.g. with fruit, almonds or sprigs of lavender).
