For most people, August means the holiday season – sit back, relax and sip a glass of wine. Summer is the high season for agriculture. The winegrowers prepare everything for the beginning of the harvest (usually in August). The winemakers are currently filling the single-vineyard wines of the previous vintage and checking the must weight and pH value of the berries in the vineyard.
This year’s very dry year presents some winegrowers with major challenges. In addition, the uncertainty on the market is a bit depressing. Delivery bottlenecks and price increases on bottles, labels, cardboard boxes or general increased energy and transport costs will become noticeable in the future. The OÖN sommeliers have deliberately chosen ten wines with a very good price-performance ratio so that August delights the senses and doesn’t put too much strain on the budget.

Char with red cabbage sauce, peas and tomatoes
Ingredients for four people:
4 char fillets, 150 to 200 g each, salt, pepper
For the sauce: 1 small onion, 150 g red cabbage, cornstarch, 125 ml crème fraîche, 3 tbsp sugar, 1 pinch of cayenne pepper, 40 ml elderberry liqueur, 1 sprig of thyme, 3 tbsp red wine or raspberry vinegar, 2 tbsp grated horseradish, 125 ml red wine , Salt
For the tomatoes: 1 tbsp butter, olive oil, sugar, cumin, cayenne pepper, 250g small tomatoes (ideally date tomatoes), mint, cornstarch, salt
For the peas: 300 g mangetout, 1 tbsp butter, sugar,

Preparation:
Sauce: Finely chop the cabbage and peeled onion. Gently simmer all the ingredients except for the flour and crème fraîche in 500 ml water for approx. 20 minutes. Mix in the créme fraiche, thicken the sauce if necessary and season with salt. Heat the butter and olive oil with a pinch of sugar, cumin and cayenne pepper, put in the tomatoes, add the mint and sauté for a few minutes in the covered pan. Possibly bind. Season with salt.
Glaze the peas in 1 tbsp butter with a pinch of sugar, salt, salt the fillets, very lightly pepper, cook with the skin side up over steam.
Place the peas, tomatoes and fillets in deep plates. Whip the sauce until foamy, pour over the fish and vegetables.
