Chamois ragout with serviette dumplings
Ingredients (for four people):
1 kg chamois (shoulder or shank), alternatively other types of game, 2 red onions, 120 g tomato paste, 2 tablespoons icing sugar, 2 cloves of garlic, 250 ml red wine, 750 ml game stock (alternatively beef soup), rosemary, marjoram, bay leaf, juniper berries, thyme, Salt, freshly ground pepper, 1 tablespoon blackberry jam, oil for frying
Preparation:
Cut the chamois into 2 cm cubes, season with salt and freshly ground pepper and sear in batches in a pan with oil. Remove all the meat from the pot, sauté the diced onions until they have some colour. Add the tomato paste, icing sugar and pressed garlic, stir through and fry a little. Deglaze with a little red wine, reduce, repeat two or three times. Important: Always let the wine boil down until it becomes a creamy and very dark liquid. Then pour in the game stock and bring to the boil. Add the diced chamois, including the meat juices and spices, and stir through.
Stir in the blackberry jam and simmer for 40 minutes.
