Among other things, the content of salt, calcium and taste were examined. Most products were judged with a good result. The balance with regard to pollutants is also pleasing: “There was hardly anything to complain about here”according to VKI nutritionist Birgit Beck. “The total germ count was also harmless for all products.”
Good, low in calories, from Austria
Basically, tofu is a highly recommended food. “It is a valuable source of protein, provides fiber, B vitamins and minerals such as calcium. It is low in calories and can be used in many different ways, both in cooked dishes and raw”says Beck.
As the study by the VKI shows, the producers mainly use native plants. According to the label, more than half of the products were made from Austrian soybeans. Only two manufacturers (“Of course for us” and “feel good”) gave no indication of origin. Genetically modified soy could not be detected in the tested products.
“Tofu is also a lightweight in terms of climate technology”explains Beck. “For the production of one kilo of tofu, only around one kilo of greenhouse gases is emitted, with beef it is 13 times as much.”
