Edi Priemetshofer has been running the Gutauer Landgasthaus “Zum Edi” for 13 years with a fine, regional blade and a smart approach. This year the chef was awarded the Upper Austrian tourism prize “Notos 2021”. The sparkling wine or the Pinot Gris goes well with the fish.

Pickled char, potatoes, parsley cream and caviar
Ingredients for two people:
2 char fillets à 150 g, 3 potatoes (Pomme Viola or Kipfler), 1 tablespoon of linseed oil, 1 handful of parsley, salt, pepper, nutmeg, 2 tablespoons of sour cream, watercress, 1 tablespoon of caviar
Pickling: 1 tbsp each of dill, tarragon, parsley, 2 cl vodka, 1 tbsp each of crushed coriander and peppercorns, 1 tbsp olive oil, juice of half a lemon

Preparation:
Roughly chop the herbs, mix well with the spices, olive oil, vodka and lemon juice. Put cling film in a suitable tub, place the fillet skin side down, spread the spice mixture over it. Place the second fillet skin side up and wrap it tightly with cling film. Pickle in the refrigerator, turn after approx. 6 hours and pickle again for 6 hours. Boil the potatoes in salted water, then cut in half, scrape out with a spoon so that only the skin remains, then fry the skin until crispy. Mash the potatoes with a fork, warm up slightly, season with sour cream, linseed oil, salt, pepper, nutmeg or stir until creamy.
Cream: Blanch the parsley, quench in ice water, mix in a blender with rapeseed oil and blanched water to make a puree. Take the char out of the stain, carefully scrape it off, wash it off lightly, cut open thinly, put the parsley cream on the plate, fill the potatoes with potato mixture, put on the pickled char, decorate with herbs, caviar and sour cream.
