The European eel, found on menus around the world, is critically endangered. Against this background, restaurant owners from the “Periferia Iodata” association active in Rome have decided to remove eel from their menu.
The decision is significant for Italian gastronomy, for which eel is an integral part of the Christmas tradition. The capitone (female eel, from the Latin caput, head) cannot be missed in Naples on Christmas Eve. The dish has its origins in ancient times.
Eating capitone – whose appearance is very similar to that of the snake, the symbol of evil – is a symbolic act of good fortune that associates the elimination of evil with the birth of Christ. Traditionally, the Capitone must be bought alive the day before Christmas Eve. During this period you can watch the animals writhing in large tanks in the city’s fish shops. They are freshly prepared the next day.
In the Neapolitan culinary tradition, capitone is mainly eaten fried. After gutting the fish, it is cut into small pieces, which are then breaded with semolina flour and deep-fried until they take on a golden color.
The European eel (Anguilla anguilla) lives in river systems primarily in Europe, but also in Asia Minor and North Africa. The International Union for Conservation of Nature (IUCN) lists the species as critically endangered in its highest threat category. Threats include habitat destruction, overfishing and water pollution.
