The quality of the must in the country is maintained: “The important thing is the feeling”

The quality of the must in the country is maintained: “The important thing is the feeling”
The award-winning producers spoiled the guests with must, cider and juices.

It is creativity, experience and great passion that unites the local must and juice producers from Upper Austria. “Our work also changes from year to year – we are always dependent on nature,” says Stefan Höllhuber from the cider cellar of the same name. In order to create a truly excellent product, one thing is required above all: “The feeling. You don’t follow the recipe at all,” says the young cider cellar master, who maintains the family business together with his father.

Young sommelier Christian Lackner also knows how important a special note is in the drinks. In the specially created cider “Good Lack”, it is the “floral note” of the elderflower that makes the drink from the Hofkellerei in Walding so special. With only 3.5 percent volume, it is “the perfect drink for an evening around the campfire,” says Lackner. The creation is also ideal for flavoring sweet dishes – which the guests at the Mostdipf Gala were able to see for themselves with the dessert. The crucial thing when creating cider: “We make sure that we only use the best fruit from the orchard.”

Fruit growing has a tradition

Fruit growing has been a tradition at the Roithmeier family’s Kronbergerhof since 1979. Apples and pears, cherries, plums and apricots as well as peaches and grapes thrive on 35 hectares, which is reflected in a diverse selection. Georg Roithmeier himself has been working at the company in Scharten (Eferding district) for 20 years and pampers his customers with “everything that fruit production has to offer”: from fresh fruit and dried fruits to juices and must in all variations to liqueurs and jams, everything is there , what your heart desires.

The non-alcoholic apple frizzante from Johanna Hopfner from Naarn (Perg district) is unusual and unique to date. With this creation, she shows how versatile and contemporary the traditional drink cider can now be interpreted. The wormwood extract is responsible for the “delicately bitter finish”. “I like to drink tonic and like the bitter note,” says Hopfner, explaining how the idea for the new product came about. A special vacuum process for distillation removes the alcohol from the fruit wine. “This preserves the aroma in the best possible way.”
