With an innovative proposal of meats cooked in “cages”, iron structures measuring 1.50 metres, Todo Brasas invites diners to try traditional cuts with the flavour of embers. On its varied menu, the pork shoulder stands out, which is ideal for the cold days ahead. Before reaching the table, the shoulder goes through a double cooking process: first it is smoked in a kamado and then it is finished in a traditional oven. The result is a juicy and tender meat, which is served with potatoes with curry and bathed in gravy sauce (made from cream and juices from cooking the meat). This dish is individual and can be enjoyed with the selection of wines, beers or classic cocktails that they offer.

CHALACA BAR

Barra Chalaca is the street food project of the famous Peruvian chef Gastón Acurio. His proposal covers the best of the cuisine of Puerto del Callao, with options such as cebiches, causa, tiraditos, rice dishes and other seafood preparations. In this cold season, the recommended soup is the Wantán soup, which is made with pea and fish stock, angel hair noodles, potato, tiger’s milk and a thin dough very common in Chinese cuisine, known as wonton. The combination of all these ingredients, with the addition of cilantro, soy sauce, sesame oil, green onion and red onion, raises the temperature and results in an intense flavor in an individual portion.

Its distinctive gastronomic proposal, which celebrates regional cuisine, makes Seibo one of the most recommended plant-based restaurants to try native and vegan dishes, with characteristic flavors of northwestern Argentina. Its recipes stand out for being comforting and healthy, as well as helping to combat cold days. The most popular option for diners is the carrero stew, made with all kinds of vegetables that provide multiple properties to this winter alternative. Its chef, Pablo Von Quintiero, sautées potatoes, carrots, celery, zucchini, sweet potato, cabutia, garlic, peas and mushrooms in a pot. In addition, he adds various flavor notes with spices such as sweet and smoked paprika, and an aromatic bouquet with rosemary, thyme, bay leaf, sage, basil, dill and parsley. He serves it in an individual clay pot to maintain the temperature and recommends accompanying it with one of their 14 wine labels available.

Malcriado is a restaurant and wine bar that invites you to try exclusive cuts of grilled pasture-raised meat, plowed in a clay oven, as well as traditional dishes with original twists. The menu at its two branches – Parque Leloir and Tortuguitas – has an “Estoy al Horno” section that highlights the comforting roasted cabutia, stuffed with vegetables and gratinated with melted grated cheese. To accompany it, it offers a wide variety of wines on tap and served from a modern Newine brand dispenser, which preserves the attributes of the various labels.

CHILL GARDEN

Chill Garden allows you to enjoy the outdoors during winter days in its hidden garden, which is fully heated. There you can taste multiple proposals for different times of the day, surrounded by natural plants and in the tranquility of the iconic Caballito neighborhood. To beat the cold, this large house offers various dishes where homely flavors prevail, transmitting warmth and comfort, such as potato gnocchi with braised ossobuco, accompanied by filet sauce and basil. The meat is cooked for 4 hours with red wine, onion, carrot and celery cut into small cubes and cooking stock. To maintain its temperature during the evening, they serve the individual portion in a paella pan. They also offer this alternative in its vegan version, without meat.
