Warm days and cool nights serve to develop a distinctive aroma, especially in the case of one of Neumeister’s leading varieties, Sauvignon Blanc.

A wine style that is subject to various commercial fashion trends does not correspond at all to the philosophy of the successful, award-winning winemaker Christoph Neumeister. Targeted and laborious work in the steep vineyards and in the cellar are the focus of production. 30 hectares of widely scattered vineyards in the best locations of the volcanic country are meticulously worked by hand.

In terms of grape varieties, the focus is clearly on Morillon and Sauvignon Blanc. These varieties feel particularly at home on the steep slopes of Moarfeitl and Saziani. Both vineyards have a relatively high lime content, which characterizes the flavor profile of the wines. The oldest Sauvignon Blanc vines are on the steep eastern site of Buchberg, which can only be reached on foot. It goes without saying that the care of the vines and grapes is carried out there exclusively with elaborate manual work.

All vineyards are harvested selectively by hand, with the grapes being sent home in small 20 kg boxes. Before further production, only the best berry material is released for further processing by hand.

A relatively long maceration time means that the juice yield gives the later wine a corresponding depth. The fermentation takes place only with natural wild yeasts, depending on the location and variety sometimes in barrels with a volume of 500 to 2500 liters. Later, after a calm fermentation process, the wine is allowed to mature on the fine lees for a while and is then bottled at the right time.

Ideally, Christoph Neumeister’s portfolio is divided according to the principle of origin into regional wine, local wine, Erste STK (Styrian Terroir Classic) location and Great STK location. With one exception: the regional wine “Gemischter Satz”. A complex and lively wine that OÖN readers attending the upcoming wine show (September 16 in Helfenberg) can look forward to.
