Uni Omakase: a trip to Tokyo in the heart of Palermo

In the heart of Palermo, a culinary secret is hidden: Uni Omakase. This restaurant was recently awarded a mention in the Michelin 2024 guide and is run by chef Damián Shiizu, an entrepreneur with more than 25 years in the industry and owner of different sushi restaurants. This intimate place, with capacity for only twelve people, transports you to an authentic Tokyo omakase, in a minimalist and sophisticated setting, with Japanese details that immerse you in Japanese culture.

The menu is conceptual, a true sensory journey with fourteen courses that change with each visit, but always include dishes made with fresh, high-quality products. Prawns, eel, trout and other fresh fish are prepared with traditional techniques and typical Japanese ingredients. Each bite is a work of art, with extremely novel flavours and textures for the palate.

Some of the creations that can be enjoyed in this gastronomic space are the tartar of aged Patagonian trout with sanshou pepper and ponzu sauce; the nigiri gunkan ikura uzura wrapped in nori seaweed, filled with trout roe marinated in soy sauce, sake and mirin; or the open temaki of river eel (unagi), with nori seaweed, sushi rice, kabayaki sauce and tenkatsu (tempura dough balls). Each step is a demonstration of the sushiman’s dedication and passion for Japanese cuisine.

But this restaurant is more than just a meal, it is an experience where the calm music, the glass waterfall at the reception and the soft lighting create a relaxed and romantic atmosphere. The service is impeccable, with a team that guides you through every stage of this culinary journey. And, of course, the sake with which they pair each bite is exclusive and they have varieties such as Yuzushu, a liquor based on Japanese lemon with aromatic properties, or Junmai Taru, a dry sake with aromatic notes of cedar. As with the entire dinner, each pairing is a surprise. Both sake and water are included in the menu and they also have an extensive list of selected wines for those who wish to order separately.
