Step by step: How to make a cream of pumpkin soup

Ingredients

  • 1 squash.
  • 300 grs of onion.
  • 150 grs of carrots.
  • 3 garlic cloves.
  • 1 pot of cream
  • 1 liter of vegetable broth.
  • Salt
  • Pepper
  • Olive oil.

Procedure

  1. Cut the squash into a lid, hollow out, remove the seeds and set them aside.
  2. Season the pumpkin with salt and pepper.
  3. Place the squash in the oven, preheated to 180°, for approximately 1 hour.
  4. Wash the pumpkin seeds and dry.
  5. In a baking dish, let it toast for approximately 15 minutes.
  6. Slice the onions and garlic, and cut the carrots into cubes.
  7. Once the pumpkin is cooked, remove the pulp from the inside, leaving a layer approximately 1.5 cm thick.
  8. In a pot, sauté the garlic and onion. After 4 minutes, add the carrot and broth. Season with salt and pepper, cover and let it boil.
  9. After 15 minutes, remove the pot from the heat and add the pumpkin pulp.
  10. Mix

  12. Bring to a boil for 2 minutes.
  13. Pour the cream soup into the pumpkin and add the toasted seeds.
