Step by step: How to make a cream of pumpkin soup
Ingredients
- 1 squash.
- 300 grs of onion.
- 150 grs of carrots.
- 3 garlic cloves.
- 1 pot of cream
- 1 liter of vegetable broth.
- Salt
- Pepper
- Olive oil.
Procedure
- Cut the squash into a lid, hollow out, remove the seeds and set them aside.
- Season the pumpkin with salt and pepper.
- Place the squash in the oven, preheated to 180°, for approximately 1 hour.
- Wash the pumpkin seeds and dry.
- In a baking dish, let it toast for approximately 15 minutes.
- Slice the onions and garlic, and cut the carrots into cubes.
- Once the pumpkin is cooked, remove the pulp from the inside, leaving a layer approximately 1.5 cm thick.
- In a pot, sauté the garlic and onion. After 4 minutes, add the carrot and broth. Season with salt and pepper, cover and let it boil.
- After 15 minutes, remove the pot from the heat and add the pumpkin pulp.
- Mix
- Add the cream and mix again.
- Bring to a boil for 2 minutes.
- Pour the cream soup into the pumpkin and add the toasted seeds.
