Another frequent problem: the oxidation of the avocado. Once cut, this fruit tends to become brown due to the action of enzymes called polyphenol oxidase, which react to contact with oxygen.

To avoid this, Zapién recommended a simple method: “String the avocado with a thin layer of oil creates a protective barrier that prevents oxidation”. In this way, by reducing exposure to air, its freshness and original appearance for longer.
