Where to eat the most outstanding artisanal pastas in the city of Buenos Aires

Led by the renowned Pugliese chef Leonardo Fumarola, L’adesso is one of the greatest references of Italian cuisine in the country. Here, the pasta is made with Italian durum grain semolina and is kneaded every day, based on classic recipes that are adapted to the “now” palate. The menu offers eight options and, among the most requested, we find the typical Cacio e Pepe, a fresh, long and thick pasta, buttered in sight in a large mold of Italian cheese with lots of pepper; lasagna with bolognese and gratin white sauce; and cavatelli con brasciole, which are meat and cheese rolls with Italian tomato sauce. The restaurant has existed for 13 years, with a comfortable lounge (which was recently renovated) and a picturesque garden surrounded by greenery, heated during the winter season.

Biasatti’s Tratto

La Tratto de Biasatti is the restaurant of Milton Bertoni and Stefania Langford, two chefs passionate about Italian cuisine and owners of the pasta factory that bears the same name and is located in the same space. In this small place you can see how they make their pasta in plain sight, using durum grain semolina and free-range eggs. Among its options, stand out the braised lamb ravioli in its cooking base with sour cream, the bucatini al bronzo a la amatriciana (Italian pomodoro, guanciale, red onion, fried basil and pecorino) and the bolognese lasagna with bechamel, pomodoro and Parmesan.

Aldo’s Restoran

Aldo’s Restorán’s Italian-American menu was created by chef Leo Azulay and focuses on 100% homemade pastas, in short, long and filled varieties. They are made by hand with semolina and organic eggs, adding some Italian products and excellent quality ingredients. The dynamism of the menu allows you to try seasonal preparations and some always-present classics, such as guitar strings with pomodoro (and optional pork polpette) or tagliatelli stuffed with baked pumpkin, amaretti and parmesan, with sage butter and citrus peel . Since May, on Sundays at noon you can try “Sunday ravioli” with pomodoro and, if accompanied with a bottle of Tutu Malbec Calcáreo Mix, they offer another extra bottle as a gift. On the restaurant’s heated terrace and its elegant lounge with private wine cellar, it is possible to taste more than 700 wine labels selected by sommelier Aldo Graziani, alma mater of the restaurant.

Carmen

The brand new Carmen restaurant specializes in London-style pastas, with a marked presence of butter and citrus flavors. Commanded by the young chef Ignacio Feibelmann (former participant of the famous reality show MasterChef), the place has a pastifice from where you can glimpse how they make their pastas and variety of sauces, which are also available to take away. The menu offers eight fresh pasta options and the favorites are: roasted beet cappelletti with provolone, pangrattato, butter and lime; Cacio e Pepe ribbons with kamado-roasted beef rib; and kamado surubí tortelli with lemongrass butter and sprouts. The living room has a warm atmosphere, with exposed bricks and careful lighting. It has a small winter garden and an area on the sidewalk with tables sheltered by a large awning.

The Parolaccia

For 25 years, the elegant restaurant La Parolaccia has been offering a journey through the authentic flavors of Italy. The fresh pastas are the star of the menu and are produced in an artisanal way with local and Italian ingredients. In addition, they have gluten-free, vegetarian and vegan options. Among the favorites are the Gran Caruso sorrentinos, stuffed with mozzarella and cooked ham, gratin with cream, cooked ham, mushrooms, poultry and pomodoro; theScarparo verdi ravioli, spinach and ricotta with pesto, garlic, sun-dried tomatoes and pomodoro; and the Don Corleone fusilli al fierrito, with pomodoro, olive, garlic, black olives and capers. It should be noted that, both day and night, they offer a three-course Parolacho menu of your choice, with a welcome aperitif, a non-alcoholic drink, a bottle of wine for every two people, an infusion with petits fours and a glass of limoncello .

The menu at the Italian cantina Cosi Mi Piace focuses on Roman pizzas, but homemade pastas also have a place of honor. The proposal of the Il Giardino Romagnoli restaurant takes you to Italy through antipasti, homemade pizzas, artisanal pastas, seafood options and elaborate dishes, which are made with noble ingredients, such as oysters, octopus, artisanal cheeses, black truffle and Italian tomato sauce .
