To cook a lemon mousse approximately 6 servings The following steps need to be followed
Ingredients
- 400 ml of cream (whipping cream)
- 200 grams of sugar
- 3 lemons (juice and zest)
- 3 egg whites
- 1 pinch of salt
Preparation
- In a large bowl, beat the cream with 100 grams of sugar until stiff. Store in the refrigerator.
- In another bowl, beat the egg whites with the pinch of salt until soft peaks form. Add the remaining 100 grams of sugar gradually, beating until you obtain a firm meringue.
- Squeeze the lemons and add the juice to the whipped cream. Mix gently.
- Fold the meringue into the cream and lemon mixture, taking care not to lose any air.
- Add the lemon zest and mix gently until everything is combined.
- Divide the mousse into individual glasses or cups and refrigerate for at least 3 hours before serving.
