Martin Luchetti, chef at Auténticoreverses each step not only in the recipe, but, like an alchemist, fuses the traditional with the Mendoza ingredients, giving freshness to the content of the dish and a unique flavor, since they vary according to the season of the year.
In a presentation made at the Bressia Winerythe five-step menu consisted of:
- First step: Brioche bread and pistachio pate with Mendoza empanada.
- Second step: Colorful carrots from an agroecological supplier, sunflower seed puree, lacto-fermented carrot, tangerine and buckwheat.
- Third step: Roasted gyrgolas, beet yogurt, beet raisins, apricots, pomegranate pickles, roasted kinchi, cilantro.
- Fourth step: Tip of back pattern smoked and cooked at low temperature accompanied by pumpkin puree and noisette butter, quince sauce, onion textures, pumpkins in lime.
- Fifth step: Quince chaja, with almond sponge cake and hibiscus meringue.
Luan Fernandez, one of its owners, says that they are supplied exclusively with local products: “We have our own gardens, located in Maipú, Valle de Uco and Luján de Cuyo. At the same time, we maintain a close relationship with local producers, from whom we guarantee purchases throughout the year to help make them sustainable. We know that everything comes together to create that unique and sustainable gastronomic experience.”
